Simple Ingredients for Mexican Chicken and Rice Skillet

I started Mexican Chicken and Rice Skillet with chicken breasts I found on sale.  I had to remove the bones and skin, which took me just a minute, then cut the meat into bite sized pieces.  A quick saute and the pan was ready for the rest of the ingredients.  Rice, water, sauce, and black beans get added to the chicken, covered, and simmered for a mere 20 minutes.  The resulting dish is amazing in the complexity of flavor.  I use a Frontera sauce packet that I find in my favorite grocery store, in the same section as all the Mexican seasonings.  It’s a fantastic way to season your Tex-Mex dishes with natural sauces.

Mexican Chicken and Rice Skillet

Ingredients

  • 2 chicken breasts, boned, skinned, and cut into bite sized pieces
  • 2 T olive oil
  • 2 C long grain rice
  • 4 C water
  • 1 packet Frontera New Mexico Taco Skillet Sauce
  • 1 can black beans, rinsed
  • 2 C shredded Mexican cheese
  • 1 pt sour cream

Instructions

  1. Heat a large skillet over medium high heat.
  2. Swirl the olive oil in the pan and add the chicken. Saute until chicken is nearly done, with very little pink remaining in the center.
  3. Add the rice, water, sauce, and beans. Bring to a simmer.
  4. Cover and simmer 20 minutes, until the water is absorbed and the rice is tender.
  5. Serve with cheese and sour cream.
