Mini Parmesan Meatloaf Recipe



My favorite meatloaf is Mini Parmesan Meatloaf.  There is something so comforting about this meatloaf.  It is very satisfying while having built in portion control.  You have gotta love that!

The Mini Parmesan Meatloaves are very frugal as well.  You are only using a pound and a half of ground beef.  With the price of 93/7 ground beef being an average of $3.99 a pound here, each mini-meatloaf comes out to around 50c each!  And that is with the cost of other ingredients.

Just a quick note, I totally forgot to put the egg and the brown sugar in this picture.  OOPSY, my bad!  But here are all the ingredients (sans egg and brown sugar).


Now without more of my babbling about how good these are, because they are really good and totally easy to do… is the recipe:

Mini Parmesan Meatloaf

Mini Parmesan Meatloaf


  • 1 1/2 pounds ground beef (93/7)
  • 2 slices of whole wheat bread (no crust, torn into small pieces)
  • 1/3 cup of milk
  • 1 egg
  • 1/4 cup of Parmesan Cheese
  • 1 Tablespoon of Dried Parsley
  • 2 cloves garlic grated or 1 1/2 teaspoon of garlic powder
  • 1/4 cup of very finely diced onion or 1 1/2 teaspoon onion powder
  • 1 Tablespoon Worcestershire Sauce (or 1 teaspoon of soy sauce)
  • 1/2 teaspoon salt (or less, to taste, there is salt in the cheese and Worcestershire sauce)
  • 1/2 teaspoon fresh cracked black pepper
  • 3/4 cup ketchup (divided)
  • 3 Tablespoons Tomato Paste (divided)
  • 1 1/2 teaspoons packed brown sugar


  1. How to taste test: Take a small amount of the mixture. Put in a skillet and brown it up. Taste for seasoning. It won't be PERFECT, because you haven't put the tomato glaze on it...but it will be a good indication.
  2. In a small bowl, put the milk and bread. Use a fork to really get the bread soaked. Set aside for 5 minutes to really soak up the milk.
  3. Preaheat oven to 375
  4. In a medium to large bowl, put Parmesan Cheese, Dried Parsley, Grated Garlic (or Garlic Powder), Diced Onion (or Onion Powder), Worchestershire Sauce (or Soy Sauce), Salt, Black Pepper, 1/4 cup of Ketchup and 1 Tablespoon of Tomato Paste.
  5. Mix together very, very well. Mixing all the ingredients WITHOUT the meat, helps you keep from overworking the meat. Squeeze out the excess milk from the bread and add the bread to the seasoning mixture. Mix well. Add meat and mix enough to combine, but be careful not to overmix.
  6. Divide Meat Mixture into 12 even portions. This is easily accomplished by dividing it into half, then each half into half and then into thirds. Doing it this way has always kept me from making one really large meatloaf and one that is barely a meatball. :)
  7. Turn the oven down to 350 and bake for 25 minutes and check to see if they are done. (Register 165 on the thermometer)
  8. Combine the remaining 1/2 cup of Ketchup, 2 Tablespoons of tomato paste and 1 1/2 teaspoons packed brown sugar. Spread a generous amount on top of each mini-meatloaf. Put back in the oven and cook for about 10 minutes. If the top isn't that yummy brown from the sugars in the ketchup and brown sugar, then turn the broiler on and broil for a minute or two.

Serve this meatloaf any way you would like.  I prefer to serve with mashed potatoes, because I can mix the mashed potatoes with the meat.  LOVE!
