Yummy No Bake Energy Bites

No Bake Energy Bites are amazing little bites that you can make up ahead of time and have on hand for those times that you don’t have a moment to make a snack or even breakfast.  I love No Bake Energy Bites for camping breakfasts, especially when I’ve got a full day planned and I just want to get up and go.  It’s a wonderful combination of oats, chocolate, and peanut butter, and reminds me of cookies I used to make with my friends when I was younger.  No Bake Energy Bites are the perfect start to a good day!

Ingredients for No Bake Energy Bites

I start my No Bake Energy Bites with old fashioned oats.  Sometimes I toast them, sometimes I use them raw.  It just depends on my mood and how much time I have to make them.  Peanut butter and honey hold everything together in a delicious and energy-filled ball.  Coconut, ground flax seed, and mini chocolate chips round out the flavors, with just a touch of vanilla to bring it all together.  The No Bake Energy Bites hold together well, and will stay in the fridge for quite a while.  They are a perfect way to give yourself a boost without having the letdown of a sugar rush.

  • 1 C old fashioned oats
  • ½ C creamy peanut butter
  • ⅓ C honey
  • ⅔ C sweetened coconut, shredded, toasted, and cooled
  • ½ C ground flaxseed meal
  • 1 t vanilla extract
  • 6 T mini chocolate chips


  1. Mix all the ingredients in a large bowl.
  2. Refrigerate until set.
  3. Roll into 1 inch balls and place in an airtight container.
  4. Refrigerate until ready to eat.

Changing Up Your No Bake Energy Bites

It’s so easy to change up your No Bake Energy Bites to your tastes.  I’ve added dried fruit, especially blueberries and cherries, replacing the chocolate chips, for a change of pace.  You can also use different butters, such as cashew, crunchy peanut butter, or almond butter to alter the flavor as well.  If you are allergic to peanuts, any of the other nut or seed butters will work with this recipe.  I love to make homemade almond butter with just a touch of cinnamon to use in this recipe.  Just toss roasted almonds in a food processor and process until the butter forms.  Any way you make your No Bake Energy Bites, they will be a delicious treat for your family!
