One Pot Lemon Chicken for a Tasty Dinner

Ingredients for One Pot Lemon Chicken
One Pot Lemon Chicken starts off with some creamy red potatoes and carrots. They get slightly browned, then chicken gets added and cooked for a bit, just until it’s no longer pink. Everything is seasoned up with some salt, lemon pepper, and lemons for a perfectly bright and delicious dish. 3 carrots, diced (pantry)
2 lbs red potatoes, cut into ½ inch dice
1.5 lb Meijer frozen chicken breast, thawed and cut into bite size pieces
3 T olive oil (pantry)
2 T butter (pantry)
2 cloves garlic, minced (pantry)
lemon pepper (pantry)
Melt the butter and olive oil over medium heat in a Dutch oven.
Place the carrots and potatoes in the pan and allow to cook7-10 minutes, until slightly browned.
Season chicken with salt and lemon pepper liberally. Place in pan; stir occasionally and cook until no pink remains.
Zest and juice 1 of the lemons; add to the pan. Thinly slice the remaining lemon and add to the pan.
Cover and cook until potatoes are tender, about 15 minutes, stirring occasionally.
Remove the lemon slices and serve.
