Pan Roasted Potatoes with Lemon Gravy

One of my favorite dishes when I go to a Greek restaurant is the potatoes.  Pan Roasted Potatoes with Lemon Gravy, to be exact.  They are tender and delicious, with a tangy, rich sauce that makes them past amazing.  And, they are super easy to make with just a few ingredients that you probably have in your kitchen.  I pair these with roasted chicken, as I use the chicken drippings to make the gravy with if I don’t have premade gravy in my pantry.  Pan Roasted Potatoes with Lemon Gravy are a great side dish when you want something a little different from the average mashed potato.

Making Pan Roasted Potatoes with Lemon Gravy

I started out my Pan Roasted Potatoes with Lemon Gravy with a yellow fleshed Yukon gold potato.  They have a nice waxy skin and smooth flesh that gives the potatoes a great texture.  I cut them into quarters or sixths, lengthwise, and placed them in the pan with butter.  Onions and garlic added a lot of flavor to the potatoes themselves as they roasted.  I topped the Pan Roasted Potatoes with Lemon Gravy, that I made from the drippings from the chicken I roasted.  The lemon flavor was achieved with the juice of a freshly squeezed lemon.  Paired together, you have a savory dish with a beautifully bright finish.

Pan Roasted Potatoes with Lemon Gravy

Ingredients

  • 3 lbs Yukon gold potatoes, washed, dried, and cut into wedges lengthwise
  • 1 onion, chopped
  • 6 cloves garlic, sliced thick
  • ½ t dried rosemary
  • 4 T butter
  • 2 C gravy, preferably chicken
  • 1 lemon, juiced and seeds removed

Instructions

  1. Place the potatoes in a large skillet. Top with the onions, garlic, and rosemary..
  2. Cut the butter into pats and sprinkle around the top.
  3. Cover and roast on medium low, turning carefully with a spatula, until potatoes are tender.
  4. In a small saucepan, heat the gravy to a simmer.
  5. Stir in the lemon juice. Serve over hot potatoes.

Herbing Up Your Pan Roasted Potatoes with Lemon Gravy

You can add other flavors to your Pan Roasted Potatoes with Lemon Gravy simply by adding fresh or dried herbs.  I used rosemary in my original recipe, but you can also add oregano, parsley, thyme, or even tarragon for a fresh flavor that goes well with everything from chicken to fish to pork.  Adding a little dry white wine to your gravy will add a richness to the flavor that you’ll love too.  Get creative with your herbs and make Pan Roasted Potatoes with Lemon Gravy your own!
