Pineapple Fluff Dessert

Summery Pineapple Fluff Dessert

Pineapple Fluff Dessert is one of the easiest desserts I’ve ever made.  Half frozen, half fluff, it’s an amazingly cool and refreshing treat.  I love pineapple, from pineapple upside down cake to fruit salad, to Pineapple Fluff Dessert, I can’t get enough of the island fruit.  When I found the recipe for Pineapple Fluff Dessert, I knew it was going to be perfect.  A graham cracker cookie base, topped with a perfectly delicious white chocolate pudding layer, frozen before being topped with a combination of cool whip and crushed pineapple.  If I’m feeling really fancy, I’ll toast some coconut and sprinkle it over the top.  Pineapple Fluff Dessert is really the perfect summer dessert.

Gluten Free Options for Pineapple Fluff Dessert

I made my Pineapple Fluff Dessert gluten and mostly dairy free, and I have to say, it was amazing.  Enjoy Life makes a wonderful Vanilla Honey Graham cookie that is perfect in Pineapple Fluff Dessert.  Mixed with a dairy free butter, it made a softer crust that is delicious.  I made the pudding layer with almond milk, which, I found out, doesn’t set up like regular milk, so I changed up the recipe a little bit and froze the the dessert after adding the pudding layer.  The topping was simple.  Drained crushed pineapple mixed with extra creamy Cool Whip right before serving made Pineapple Fluff Dessert absolutely perfect.  Chilled, refreshing, and delightful, everyone loved it.
