Pumpkin Pie Oatmeal adds a rich and savory flavor to the otherwise plain and boring oat. I love using home canned pumpkin pack in this recipe. I always can as much pumpkin pack in the fall as I can get sugar baby pumpkins for. They have a terrific sweetness that works well in any pumpkin recipe. If you don’t like to can, you can roast sugar baby pumpkins in the oven until tender and then take out the flesh, mash it, and place it in plastic zippy bags. It freezes well and all you need to do to use it is thaw it. I have pumpkin available year round just by canning or freezing it. To add a little bit of extra sweetness to Pumpkin Pie Oatmeal, add maple syrup or brown sugar to your bowl. You’ll never want plain old oatmeal again.

  • 2 C oats
  • 15 oz can pumpkin puree (NOT pie filling)
  • 14 oz can whole coconut milk
  • Enough milk to expand the coconut milk to 6 cups
  • 1 T vanilla extract
  • 1 ½ T pumpkin pie spice
  • brown sugar or maple syrup, to taste


  1. In a large saucepan, add the oats, pumpkin, coconut milk/milk, vanilla, and pumpkin pie spice.
  2. Heat over medium heat, stirring frequently. Simmer until the oats are tender and creamy, about 10 minutes.
  3. Serve with brown sugar or maple syrup.

Using Steel Cut Oats and a Slow Cooker for Your Pumpkin Pie Oatmeal

No time to make breakfast in the morning? Make it the night before. Grab some steel cut oats, increase the milk to 6 cups, and pour everything in your slow cooker for beautiful breakfast ready when you are. I turn my slow cooker to low and let it simmer all night for breakfast that’s hot and delicious.  Start this dish about 9 pm or later for the best results.  Once I learned this trick, I wondered why I had never tried it before.  Pumpkin Pie Oatmeal is great as traditional rolled oats or steel cut and makes the best breakfast.
