Quick Chicken Cacciatore for a Weeknight Meal

I get tired of making the same old chicken recipes.  It gets boring, and so does the chicken.  When I get tired of chicken, I bring out my favorite recipe: Quick Chicken Cacciatore.  I remember my mom making a long-cooking version of this, and since I’m often short on time, I figured out how to make it just as delicious, but in 30 minutes instead of 4 hours.  Quick Chicken Cacciatore will fill your home with the wonderful scent of simmering tomatoes, basil, and oregano, as well as garlic.  It’s a great way to have a quick, healthy dinner on a busy weeknight.

What Makes Quick Chicken Cacciatore Amazing

Quick Chicken Cacciatore starts out with fresh chicken breast, removed from the bones and skin, then cut into bite sized pieces.  Onions and garlic bring in the flavor that marks this dish as classically Italian.  Tomatoes form the sauce.  I used home canned tomatoes, but canned tomatoes from the grocery store work just as well.  You can use whatever cut of tomatoes you prefer.  Personally, I start with quartered tomatoes and mash them down a little.  I round out the flavors of Quick Chicken Cacciatore with a bit of burgundy wine.  It brings a rich flavor that is unmatched.  You can serve Quick Chicken Cacciatore as it is, or over pasta for a hearty meal.

  • 2 chicken breasts, bones and skin removed, cut into bite sized pieces
  • 2 onions, diced
  • 6 cloves garlic, coarsely minced
  • 3 T olive oil
  • 2 quarts tomatoes (or 2 40 oz cans)
  • 1 T dried basil
  • 1 T dried oregano
  • 1 C burgundy wine
  • 4 servings hot pasta


  1. Heat a saute pan to medium hot. Add the oil, chicken, onions, and garlic. Saute until chicken is no longer pink in the center.
  2. Add the tomatoes, basil, oregano, and burgundy wine. Simmer for 20 minutes, until most of the moisture has simmered off.
  3. Serve over hot pasta.

Quick Chicken Cacciatore Mix Ups

If you are just completely tired of chicken, try making Quick Chicken Cacciatore with beef or lean pork.  Cut it up into bite sized pieces and cook as described in the recipe.  It will taste just as delicious, but with a different meat, it has a new base flavor.  You can also change up the flavor a bit by putting it over rice instead of hot cooked pasta, or even change up the spices to whatever sounds amazing.  I love to use garam masala sometimes and add a Middle Eastern flair.  Whichever way you make Quick Chicken Cacciatore, you’ll have a healthy, quick meal for your family.
