Rich Ultimate Blueberry Muffins

Have you ever woken up in the morning wishing that you had Blueberry Muffins?  Not just any blueberry muffins, but some that were rich and sweet, but not too sweet.  Well, never fear, the Ultimate Blueberry Muffins are just about 20 minutes away.  Grab the ingredients, a couple of bowls and get to making the batter.

First of all, let me just tell you that I use frozen blueberries and keep them frozen until the last possible second.  This is really important if you don’t want the blueberries to bleed all over your batter.  If you add the blueberries too early, you will have a slightly blue muffin with the whole blueberries in it.  It isn’t a big deal for taste, they taste awesome.  But they do look nicer to have the contrast between the cream colored muffin and the rich blueberries.

Second of all, You can make your muffin mix ahead of time and just add the wet ingredients (milk, eggs, blueberries and vanilla) when you are ready to bake.  That even saves more time on those busy mornings.

  • 6 Tablespoons Butter (room temperature)
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 Tablespoon Baking Powder
  • 1/2 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 2 eggs
  • 1/2 cup milk (plus a tablespoon or so if the batter is too thick)


  1. Preheat oven to 400 degrees
  2. Spray 12 compartment muffin tin with cooking spray
  3. In medium sized bowl, cream together the butter and sugar. Set aside.
  4. In a medium sized bowl, mix together the salt, baking powder and flour.
  5. In a small bowl, beat the eggs, with 1/2 cup of milk and the vanilla.
  6. Mix the 1/3rd of dry ingredients into the sugar/butter mixture and moisten with the milk mixture. Do this again until all ingredients are incorporated. Be careful not to overmix. The batter should be lumpy.
  7. Time for the blueberries, take them from the freezer and gently fold them into the batter. Immediately divide the batter into the 12 muffin cups, and put to bake.
  8. Bake for about 18-20 minutes or until the muffins are golden brown and a toothpick inserted into the muffin comes out clean.
  9. Remove muffins from the oven and set the pan onto a wire cooling rack. Let it stay there for 2-3 minutes before you take the muffins out.

Pretty simple, huh?

If you were to make ahead the dry ingredients, just store in a zippy top bag and keep in pantry.  Then add the wet ingredients when ready to bake.

There are many alterations you can make to this recipe.  You can leave out the blueberries completely and top the batter with cinnamon sugar and have a Rich and Sweet Cinnamon Muffin.

You could also substitute frozen cranberries in the recipe instead of blueberries.  If you do this, add about a tablespoon of minced orange zest.  Makes for a yummy Cranberry Orange muffin.
