Somewhere, someone told me that making quiche was hard, and that’s why people don’t have quiche very often anymore.  When I grew up and started branching out with my kitchen skills, quiche was something that I wanted to make.  Spinach and Goat Cheese Quiche was one of my favorite blends of bright and savory ingredients in a fluffy egg base.  And you know what I found out?  Making quiche is as easy as making a pie crust.  Whether you make your own crust or buy one in the refrigerated section, Spinach and Goat Cheese Quiche is a versatile breakfast that is super easy to get to the table.

Fresh Ingredients for Spinach and Goat Cheese Quiche

I start with my homemade pie crust.  It’s super simple and has a lot of wonderful flaky flavor.  Then I start layering savory and salty in the crust.  I caramelize red onions in a bit of olive oil, then when they are about a minute from being done, I toss in my spinach to wilt it and drive off any extra water.  Who wants a watery quiche?  Ew.  That gets placed on the bottom of the crust.  I top that with crumbled goat cheese.  If you’ve never had goat cheese, it has a wonderful tangy, salty flavor that gives the Spinach and Goat Cheese Quiche a deep, delicious flavor.  If you have some fresh tarragon or thyme, they would both go perfectly in Spinach and Goat Cheese Quiche.

Simple and Amazing Spinach and Goat Cheese Quiche


  • 1 C all purpose flour
  • ½ C butter flavored Crisco
  • ½ t salt
  • ⅛ C (2 T) very cold water
  • Extra flour for rolling
  • Filling:
  • 1 red onion, sliced thin
  • 2 T olive oil
  • 2 handfuls spinach
  • 1 4 oz container crumbled goat cheese
  • 4 eggs
  • 2 C heavy cream
  • 1 t salt
  • ½ t pepper


    For the Crust:
  1. In a bowl, place the flour, Crisco, and salt. Using a fork or pastry cutter, mix the shortening into the flour until a crumbly mixture forms.
  2. Add the water and mix well.
  3. Form into a ball and turn out onto a well floured surface. Roll to ⅛” thickness. Place in 9 inch pie pan and roll edges to form a lip in the crust.
  4. Set aside.
  5. For filling:
  6. Heat oven to 425 degrees F.
  7. In a saute pan, place the onions and olive oil. Heat over medium high heat and caramelize the onions.
  8. When they are nearly browned, add the spinach and allow to wilt for 1 minute.
  9. Place the onion and spinach mixture in the pie crust.
  10. Sprinkle with the goat cheese.
  11. In a bowl, whisk the eggs until completely blended. Add the remaining ingredients and mix well.
  12. Pour over the ingredients in the crust.
  13. Bake 15 minutes at 425 degrees F.
  14. Turn the oven down to 300 degrees F and bake an additional 30 minutes, until a knife inserted into the center comes out clean.
  15. Remove from the oven and allow to cool 5-10 minutes.
  16. Serve warm with fruit.
