Simple Cassoulet for Camping

A cassoulet traditionally is a French slow cooked meal consisting of sausages and beans.  It’s super simple to make and I decided take it on the road camping with my family.  What a perfect decision!  Many of the ingredients were things I could chop and have ready to go from home, making prep work almost non-existent.  And on long days of hiking, playing, and just having fun in the great outdoors, Simple Cassoulet makes a great meal that recharges you.  Best yet, it takes minutes to make, and clean up is a breeze, whether you are using a camp stove or a camp fire.  It also can be made in minutes at home for that outdoor feel without needing to be amongst the trees!

Ingredients are Easy for Simple Cassoulet

I started my Simple Cassoulet with the trifecta of goodness.  Diced onions, celery, and carrots, diced and packed at home, were easy and added a lot of flavor.  Of course, I added garlic because what’s not better with a clove or two of garlic?  For the sausage, I found some hot and spicy turkey sausage.  It adds a lot of flavor without a lot of fat, making Simple Cassoulet easy to cook over open flames.  The rest of the ingredients come easily in cans, making them fantastic to pack.  Cannellini and kidney beans add more protein and carbs, while tomatoes add flavor and more veggies.  Simple Cassoulet is a great way to get lots of protein and veggies in your diet when camping.  Who needs instant, just add water meals when out in the wilderness when you have Simple Cassoulet?

Simple Cassoulet for Camping or Home


  • 2 ribs celery, diced
  • 2 carrots, diced
  • 1 onion, diced
  • 2 cloves garlic, diced
  • 2 T olive oil
  • 1 pkg smoked style turkey sausage, cut into ½ inch slices
  • 1 15 oz can cannellini beans, drained and rinsed
  • 1 15 oz can kidney beans, drained and rinsed
  • 1 15 oz can tomatoes, diced
  • 1 bay leaf
  • ½ t rubbed thyme
  • salt
  • pepper


  1. Heat a cast iron deep skillet over medium low heat.
  2. Add the oil, carrots, celery, onions, and garlic. Saute until onions are clear and veggies are tender.
  3. Add the sausage and saute until it is hot and begins to brown slightly.
  4. Add the drained beans, tomatoes, and seasonings. Bring to a slight simmer.
  5. When the beans are tender and the dish is hot, remove the bay leaf.
  6. Serve hot. Serves 4.

Simple Cassoulet Change Ups

It’s so easy to change up Simple Cassoulet to suit your family’s tastes.  Change out the sausage with leftover chicken, beef or pork, shredded.  Try different beans, like black eyed peas, black beans, or any other winter type bean for different flavors.  You can even add chili powder for a southwest flavor in your Simple Cassoulet.  Any way you make it, while camping or at home, with sausage or other meats, Simple Cassoulet is a great meal!
