Easy Slow Cooker Pork Carnitas from Scratch

During my busy week, my slow cooker is my best friend and I’m always looking for new, tasty recipes that my family will love. My favorite grocery store had pork loin on sale, and it brought to mind a recipe I had come across for Pork Carnitas. It was super simple, and looked to be flavorful, although I wanted to tweak it just a little bit. My Pork Carnitas turned out juicy, bursting with rich flavor, and perfect for a quick yet satisfying meal for my entire family.

Simple Ingredients for Pork Carnitas

While there aren’t many ingredients for Pork Carnitas, the ones used provide a bountiful flavor that really packs a punch. I started out with about 2 lbs of a pork loin, fat side up in my slow cooker. In a bowl, I mixed dried oregano and ground cumin, as well as salt and pepper. I rubbed olive oil all over the meat then used the spice mixture as a sort of wet rub with the oil. I sprinkled some chopped jalapeno, garlic, and onion over the top, placed the lid on and let it go on low for about 8 hours. When the meat was cooked and tender, I shredded it with two forks and placed it back in the slow cooker, turning it off for 5 minutes and letting the shredded Pork Carnitas soak up the flavor. It was served on flour tortillas with homemade guacamole, salsa, cheese, and sour cream for a fantastic meal.

Slow Cooker Pork Carnitas from Scratch


  • 2 lbs pork loin, boneless
  • 2 T olive oil
  • 1 t salt
  • ½ t ground black pepper
  • 4 t dried oregano
  • 2 t ground cumin
  • 2 onions, chopped
  • 6 cloves garlic, minced
  • 2 jalapenos, seeded and chopped
  • Soft flour tortillas
  • Extras, as desired (guacamole, sour cream, cheese, etc)


  1. Rub the pork loin with the olive oil
  2. In a small bowl, mix the salt, pepper, oregano, and cumin. Rub on the pork loin.
  3. Place in slow cooker, fat side up.
  4. Sprinkle the onions, garlic, and peppers over the top.
  5. Cover and set to low for 6-8 hours.
  6. Remove meat from the slow cooker and shred, discarding any fat.
  7. Return the meat to the slow cooker; turn off and cover, let sit for 5 minutes.
  8. Serve with tortillas and desired extras.

Pork Carnitas for Later

You can make Pork Carnitas easily for later, especially when you find meat on sale. There are two simple ways to achieve this. You can rub the meat, wrap it tightly and freeze it for later, or you can cook it as described above, then freeze the shredded meat. It’s perfect for Pork Carnitas one at a time, or put the meat on your favorite salad for a protein boost that’s flavorful and low fat! I’m sure Pork Carnitas will become a favorite with your family!
