Tis becoming the season for all kinds of gatherings, carry-ins, and parties.  I always try to find something that’s versatile and just a little different to bring, and Slow Cooker Taco Dip fills that void, plus it’s more than just your normal dip.  Beef, chicken, or turkey combine with your favorite taco fillings, such as refried beans, cheese, tomatoes, and salsa to become not only a dip that holds well in a slow cooker, but also a great filling for a taco bar.  Keeping everything in one slow cooker frees up space on your table for other tasty things too.

The Best Ingredients for Slow Cooker Taco Dip

Slow Cooker Taco Dip is versatile as to the meat you use.  You can use ground beef, turkey, or chicken, or you can use shredded versions too.  Add the flavor you are looking for so you have the Slow Cooker Taco Dip you are looking for.  I use Old El Paso taco seasoning, low sodium version, and add 1 extra packet in.  For example, if I’m using 3 pounds of meat, I use 4 packets of seasoning.  It adds an extra punch of flavor that is phenomenal.  I add even more flavor with the refried beans, either my own recipe with bacon or organic from a can.  Choose refried beans that you love on their own for the best flavor in Slow Cooker Taco Dip.  I also add some salsa, usually homemade, as well as chopped tomatoes and a handful or two of a shredded Mexican blend of cheeses.

  • 3 pounds ground beef
  • 4 packets taco seasoning
  • 1 can refried beans
  • 1 C chopped tomatoes
  • 1 C salsa
  • 2 handfuls shredded Mexican cheese
  • ½ C chopped black olives (optional)
  • shredded lettuce (optional)


  1. Brown the ground beef and drain.
  2. Stir in the seasoning packets, omitting the water.
  3. Stir in the refried beans, tomatoes, and salsa. Add in olives, if using.
  4. Heat to combine all ingredients.
  5. Transfer to a large slow cooker. Sprinkle cheese over the top. Cover and set to low.
  6. When bubbling, serve with tortilla chips or taco shells and tortillas. Top with shredded lettuce.

Making Slow Cooker Taco Dip Ahead

Slow Cooker Taco Dip is great made ahead and reheated in your favorite slow cooker.  I mix everything up in a saute pan, heat it through, then refrigerate it until about 2 hours before I want to serve it.  Spoon it into your slow cooker and set to low.  In about an hour it will start to bubble.  Stir Slow Cooker Taco Dip.  Give it a good stir and let it continue to heat.  Slow Cooker Taco Dip is just that easy!
