Slow Cooker Turkey Minestrone

Slow Cooker Turkey Minestrone for Dinner

Slow Cooker Turkey Minestrone is a favorite go-to for quick meals that I can just toss in the slow cooker and return home to.  Savory, meaty soup simmered in it’s own stock and tomato juice, it’s a great main dish or starter soup for any meal, especially when paired with a good crusty bread.  While I use ground turkey as my meat of choice, you could also use Italian sausage, ground beef, or ground chicken to give Slow Cooker Turkey Minestrone a flavor that’s to your liking.  It’s a versatile, delicious soup that you can fix any way you like.

Clean out the Fridge for Slow Cooker Turkey Minestrone

Slow Cooker Turkey Minestrone is what I consider a “clean out the fridge” soup.  I check all the veggie drawers for things that are getting older, maybe carrots that are getting roots again, or celery that’s going a little limp.  This time I found a lone sweet potato that I didn’t need for a dinner party.  It’s amazing how wonderful a soup can be with a little of this and a little of that.  I can “hide” veggies that my family might not eat otherwise when I put them in soups, such as pumpkin or squash, lentils, and even turnips or rutabagas.  Simple, delicious vegetables find a scrumptious home in Slow Cooker Turkey Minestrone.
