Spicy Buffalo Meatballs are amazing for just about any occasion.  As an appetizer, a snack, or even as a meal, they are a tender morsel.  Have you ever had a hankering for Buffalo wings, but didn’t want to mess with frying them?  Or maybe wings are just too pricey right now.  Spicy Buffalo Meatballs are an excellent way to bring the flavor of your favorite treat to the table without having to heat up the kitchen with hot oil.  They are versatile, and you can even keep some Spicy Buffalo Meatballs ready in the freezer for a quick snack or appetizer for guests.

Making Spicy Buffalo Meatballs

When I make Spicy Buffalo Meatballs, I start with ground turkey.  The flavor is mild and takes well to the flavor of the sauce.  Ground turkey has also tended to be less expensive than beef of late, and so has become a great choice as a substitute.  The meatballs for Spicy Buffalo Meatballs are simple.  Eggs, breadcrumbs, salt, and pepper are the only ingredients in the balls themselves.  This makes them perfect not only for the Buffalo wing sauce, but also for any other sauce you love, like barbecue, teriyaki, or you could even use cream of mushroom soup for a Swedish style meatball.  For the Spicy Buffalo Meatballs, I use Sweet Baby Ray’s Buffalo Wing Sauce.  It’s spicy, with a perfect flavor that really adds to the dish.

Spicy Buffalo Meatballs

Ingredients

  • 3 lbs ground turkey
  • 3 eggs
  • 1 ½ C dry breadcrumbs
  • 1 t salt
  • ½ t pepper
  • 1 bottle Buffalo wing sauce

Instructions

  1. Heat oven to 425°F.
  2. In a large bowl, mix the ground turkey and eggs until completely incorporated.
  3. Add the breadcrumbs, salt, and pepper. Mix well.
  4. Spray a rimmed baking sheet with nonstick cooking spray.
  5. Form the meat mixture into balls 1 inch in diameter.
  6. Place on the baking sheet, 1 inch apart.
  7. Bake 20 minutes, until meatballs are slightly crispy and no longer pink in the center.
  8. Place the meatballs in a slow cooker. Add the Buffalo wing sauce and gently stir to coat.
  9. Cover and set to low; allow to simmer for about 30 minutes.
  10. Serve with bleu cheese dressing if desired.

Spicy Buffalo Meatballs for Now and Later

When ground turkey is on sale, I make up batches of Spicy Buffalo Meatballs, bake them, and freeze them for later.  When I want to make up some Spicy Buffalo Meatballs, all I need to do is add them to a slow cooker with some sauce on low for about 2 hours.  The meatballs are tender and well seasoned as they simmer in the sauce.  Spicy Buffalo Meatballs are perfect for any occasion and ready quickly for your table.
