Summer is here and that means fresh greens, fruits, and vegetables.  For my family, that means a lot more kale in our diet and Strawberry Kale Salad on our plates.  If you’ve never tried kale, it’s an amazing green that has a bit of a bite to it, a crisp and chewy texture, and since it’s a dark green, there are loads of nutrients in it.  (But you don’t have to tell your kids that!)  You can substitute it as a green in virtually any salad, or mix it with other greens for a robust blend and it takes well to any dressing you can pour on it.

Fresh Flavors in Strawberry Kale Salad

What can be better than fresh, red ripe strawberries?  Putting them on a kale salad, of course!  Your favorite salad toppings can make an appearance on Strawberry Kale Salad.  I love a simple salad with grape tomatoes, hot house cucumbers sliced thin, spread out over the top of torn kale and sliced strawberries.  Add some thinly sliced red onions, mushrooms, and even chick peas for a hearty salad that becomes a meal.  For a little extra protein, try some steak, sliced super thin.  You won’t be disappointed!

  • 3 C kale, torn into bite sized pieces
  • ½ hot house cucumber, sliced thin
  • 1 pint grape tomatoes, cut in half
  • 1 pint strawberries, sliced thin
  • your favorite salad dressing


  1. Toss the kale, cucumber, tomato, and strawberries together in a bowl.
  2. Serve chilled with your favorite salad dressing

What’s your favorite salad dressing?  Ranch?  Blue cheese?  How about a nice thousand island?  They all work!  My favorite though is a simple balsamic vinaigrette I make.  It’s easy to make, and lasts a while in the fridge too.  Just mix equal parts of balsamic vinegar with a good quality olive oil, preferably extra virgin.  Add minced garlic, oregano, basil, salt and pepper to taste and give it a good mix.  Allow the flavors to meld for about an hour on the kitchen counter and you have an amazingly fresh dressing for your Strawberry Kale Salad!
