Summertime Salad the RIGHT Way!

Salads are an amazing addition to anyone’s diet, but nutritionists will tell you that they can be the pitfall of your diet too.  Many people put all the wrong things on their salad, then drown it in high calorie, low nutrition dressing.  I normally avoid those pitfalls with a variety of lettuces, a ton of veggies, and sometimes fruits and nuts in my Summertime Salad.  I also tend to make my own dressings, sticking with Italian a lot of the time, as I can use heart healthy olive oil along with flavored vinegars.  If I’m in a bind, or want a change though, I go to the refrigerated section in my favorite produce section an grab a yogurt based dressing.  My fave is Bolthouse Farms.  Seriously…35 calories in their Chunky Blue Cheese dressing, and it tastes like my favorite full calorie dressings.  I can’t beat that with a stick!

Making Your Summertime Salad Amazing

I keep my Summertime Salad pretty simple, yet completely satisfying.  For about 174 calories, I get mixed salad greens, 2 strawberries, 12 blueberries, 6 blackberries, and 10 pecan halves, as well as 2 tablespoons of my favorite yogurt dressing.  That’s an amazingly sweet and tasty salad that satisfies your craving for green goodness, as well as your sweet tooth.  And it is a fantastic way to eat some veggies for lunch or dinner.  It makes a great dinner with some shredded or diced chicken over the top as well, especially during the hot summer months where you don’t want to cook much.  Sometimes I’ll use leftover chicken from a previous meal, or pick up a rotisserie chicken in the deli of my fave grocery store.

Ingredients

  • 3 C mixed Spring Greens
  • 2 large strawberries, washed and sliced
  • 12 blueberries, washed
  • 6 blackberries, washed
  • 10 pecan halves (toasted if you like)
  • 2 T yogurt dressing

Instructions

  1. Layer in a bowl.

What to Avoid in Your Summertime Salad

When you are making your Summertime Salad, there are a few general things to avoid that add calories fast.  We already talked about dressing, which is a biggie.  But also cheese.  Yep, it’s got some health benefits, but if you are trying to keep your calories down, regular shredded cheese can add them fast.  Another thing that kills the healthiness of your salad is croutons.  The wonderful crunchy things that have all kinds of crazy flavor can also add a lot of carbs and calories.  And the final thing, and many people will let out an audible “awww…” is bacon.  It’s one of my faves, but it’s also pretty much solid fat.  I had a nutritionist once tell me that there really are no nutritional benefits to bacon.  High in fat and salt, it might add a lot of flavor, but it also adds a lot of empty calories.  If you are a bacon fiend like me, just add a little bit if you must have it.
