Caprese Salad

Summery Caprese Salad in an Instant

Few summer salads are as refreshing and beautiful on the table as a Caprese Salad.  Bright with the colors of beautiful tomatoes and fresh, crisp basil, it’s a beautiful combination in the bowl and on your plate, but it’s an even better blend of bold, spicy, and mild on your tongue.  I grow a variety of tomatoes in my garden just for this salad, to see all of the colors and flavors come together.  The wonder of Caprese Salad is that it is so easy to put together, even kids can get it ready while you are fixing other things for dinner.  It takes just a few minutes and you’ll have a salad that is so gorgeous, you won’t want to eat it!

Tomatoes for Caprese Salad

I love heirloom tomatoes of any variety for Caprese Salad.  A mixture of colors and flavors makes the best salad you could ever want.  Check your favorite grocery store or local farmer’s markets for some beautiful types.  I use a lot of cherry or pear type tomatoes, as they are bite sized and only take cutting them in half to make the salad perfect.  If you are making Caprese Salad in the winter, look for different colors of cherry and pear tomatoes in your grocery store.  Usually they will have at least red and yellow, and sometimes  you can find a container of mixed heirloom tomatoes.

Caprese Salad for Picnics

Summer is the season of picnics and Caprese Salad is the perfect addition to any gathering.  The cheese doesn’t melt in the summer heat and since there’s no mayonnaise, it’s a great addition to the table.  You can make as much or as little Caprese Salad as you need, and even serve it as an appetizer with toothpicks if you like.  Caprese Salad is a versatile, beautiful salad that will add variety and flavor to any gathering.
