Taco Pierogi Bake for a Great Weeknight Meal

I love doing unusual things with leftovers.  When I had some leftover Slow Cooker Taco Dip, I decided to pair it with some four cheese pierogies I had in the freezer and make a new meal out of it.  Taco Pierogi Bake was a total hit with my family.  The best part of Taco Pierogi Bake is that it’s super easy to toss together for a quick weeknight meal.  All you need is five minutes of prep time and dinner will be perfectly hot and tasty in no time.  It’s a fusion of Polish and Mexican that is surprisingly good, and is even good enough for company or a carry in!

Simple Ingredients for Taco Pierogi Bake

I started out with leftover Slow Cooker Taco Dip.  My family loved it but I made far too much with everything else on the table.  I warmed it just until it was soft, about 3 minutes in the microwave, so it would spread between the layers easily.  Then I layered it with two boxes of frozen pierogies.  I think any basic flavor of pierogies would work, although I’d probably skip the feta and spinach kind.  No need to precook the pierogies for Taco Pierogi Bake.  They cook while it bakes!  I poured just a little water in and topped the whole thing with cheese, then baked it, covered, for about an hour.  The result was a hot, hearty meal that my family now calls Taco Pierogi Bake.

Ingredients

  • 2 C leftover Slow Cooker Taco Dip
  • 2 boxes pierogies, frozen
  • 2 C shredded cheese, (cheddar, Mexican blend)

Instructions

  1. Heat oven to 350 degrees F.
  2. Heat the leftover Slow Cooker Taco Dip until soft.
  3. Layer the Taco Bake and pierogies in a lightly greased 3 qt casserole.
  4. Sprinkle with the cheese.
  5. Cover and bake 1 hour, until pierogies are soft and tender.
  6. Serve hot.

Taco Pierogi Bake for a Week’s Worth of Lunches

If you have even more Slow Cooker Taco Dip leftover, toss in another box of pierogies and ration the finished Taco Pierogi Bake into lunch portions for the week.   You can even freeze it for later meals if you need something quick.  Simply heat it in the microwave on 50% for a few minutes, stirring occasionally, for a fast and easy meal.  Taco Pierogi Bake is a great all purpose dish that your whole family will enjoy.
