Tortellini Carbonara Makes a Beautiful Dinner Easy

Tortellini Carbonara is a classic dish that is impressive to the eye and tongue!  But here’s a little secret: although it looks all complicated and complex, it’s really not!  It’s a really easy dish to make with a couple of shortcuts and some fabulous, yet easy to find ingredients.  This dish is perfect for a quick weeknight meal, or a feast for guests.  Even kids will love the creamy, bacony sauce over adorable tortellini stuffed with cheese.

Simple Ingredients for Tortellini Carbonara

The ingredients for Tortellini Carbonara can be found at your local grocery store.  Tortellini can be in the pasta aisle, as a dried pasta, or in the fresh pasta case.  These little gems are not only delish in Tortellini Carbonara, but also with a red sauce, or in a pasta salad instead of spirals.  They can be stuffed with just about anything, but my favorite for this dish is a simple cheese stuffing.  It adds a great flavor without overpowering the sauce.  Pancetta is an Italian style bacon that can usually be found in the deli area, in prepackaged containers.  It adds a fabulous flavor to the dish.  But, if for some reason your deli doesn’t have any pancetta, a good bacon, thick cut, makes a great substitution.  It will add the same smoky flavor and meaty bite to the sauce.  The last ingredient that has a great impact on the sauce is the peas.  While you can leave them out, I love a petite or June pea in this dish.  The tender little orbs give the dish just a bit of sweetness that is amazing and so delicious.  It really boosts the flavor of everything, including the tortellini.

Tortellini Carbonara ~ A Quick Weeknight Meal!  No, really!

Ingredients

  • 1 lg pkg tortellini
  • 3 cloves garlic
  • 1 4 oz pkg pancetta
  • 8 oz petite peas
  • 2 C half n half
  • 3 T flour
  • 1/2 C Asiago cheese
  • salt
  • pepper

Instructions

  1. Fill a large pot with water and heat to a boil. While cooking the sauce, boil the tortellini for 4-5 minutes, until they float and are tender.
  2. In a saute pan, crisp the pancetta and garlic over medium heat.
  3. Add the half n half and flour. Whisk and bring to a boil. When it starts to thicken, add the peas and cook 1 minute. Season with salt and pepper to taste.
  4. To serve, place the drained tortellini in a bowl. Top with sauce and sprinkle with Asiago cheese.
