Yes!  You would not think that chocolate and the dark hoppy Guinness would pair well, but they are amazing.  And the great thing is that the alcohol is cooked out before you even make the batter for these delectable little treats!  And what better way to celebrate St. Patrick’s Day than with two well known Irish traditions: beer and Bailey’s Irish Cream?

Topping Your Guinness Chocolate Cupcakes with Homemade Bailey’s Buttercream is Easy!

Don’t shy away from making these Guinness Chocolate Cupcakes because of the homemade frosting!  If you have a hand mixer or stand mixer, you will be able to whip up Bailey’s Buttercream in just a few minutes with three simple ingredients: butter, confectioner’s sugar, and Bailey’s Irish Cream.  The secret is in how long you whip it with the mixer.  The longer you go, the smoother your frosting will be, and the more impressive your cupcakes will turn out!

Guinness is a MUST in Guinness Chocolate Cupcakes!

The dark, rich flavor of Guinness Extra Stout adds a complexity to the Guinness Chocolate Cupcakes that you won’t find in other chocolate cupcakes.  Molasses notes filter through, and the earthy texture makes the cupcakes fluffy and light.  Pair that with a good quality cocoa and you have the most delectable cupcake you’ve ever tasted.

Guinness Chocolate Cupcakes

Yield: 24 cupcakes

Guinness Chocolate Cupcakes


  • 1 C Guinness Extra Stout, room temperature
  • 1 C butter
  • 3/4 C cocoa powder
  • 2 C flour
  • 2 C sugar
  • 1 1/2 t baking soda
  • 3/4 t salt
  • 2 eggs
  • 2/3 C sour cream
  • Frosting:
  • 1/2 C butter, softened
  • 3 C confectioner's sugar
  • 3 T Bailey's Irish Cream


  1. Heat oven to 350 degrees F.
  2. In a small sauce pan, bring the Guinness to a simmer. Add the butter and remove from heat.
  3. When the butter is completely melted, add the cocoa powder and mix until smooth.
  4. In a separate bowl, mix the flour, sugar, baking soda, and salt. Set aside.
  5. In the bowl of a mixer, beat the eggs and sour cream well. Slowly add the Guinness mixture and mix well.
  6. Very slowly add the flour mixture and mix until incorporated.
  7. Line muffin tins with paper liners. Fill 2/3 of the way full. Bake 25-30 minutes, until a toothpick inserted in the middle of the cupcake comes out clean.
  8. To make the frosting, whip the butter until smooth. Slowly add the confectioner's sugar and beat until the mixture is smooth and creamy. Add the Bailey's, continuing to beat. If you need to, add more sugar to obtain the consistency you like.
  9. Once the cupcakes are cool, frost by either piping the frosting on with a bag or spread with a knife.
