White Chicken Chili for a Delicious Change

Chili is one of those one pot wonders that works in a traditional pot or a slow cooker, making it very versatile.  Normally I make mine the southwestern way, with tomatoes, beef, and chili powder, but recently I found a great way to make it with chicken and white beans, and I have to say, White Chicken Chili was a major hit with my family.  Having grown up on the red kind, I was a bit leery, but one bite took all that concern away and I fell in love with a new version of an old favorite.  White Chicken Chili is a fairly quick to make dinner that is also good in a pot or slow cooker, and is ready when you are.  Better yet, the leftovers are AMAZING!

Yummy Ingredients for White Chicken Chili

White Chicken Chili starts out with chicken, as you’d expect.  You can use any cut of chicken in it, although I prefer chicken breasts.  Cut into bite sized pieces, they make the White Chicken Chili perfect for your spoon.  Cannellini beans provide a wonderful body, especially when some of the beans pop and melt into the chicken broth.  I use chicken stock base instead of a liquid broth, but you can use either to make your White Chicken Chili.  The whole thing is flavored with fresh jalapenos, onions, garlic, oregano, and cayenne pepper.  Just before serving, stirring in some sour cream and half n half gives you a fantastic, thick, creamy broth that really makes the dish.  I serve my White Chicken Chili with extra sour cream and shredded cheddar cheese, and the dish is complete!

White Chicken Chili Recipe


  • 2 lbs chicken, bones and skin removed and cut into bite sized pieces
  • 1 T olive oil
  • 2 onions, peeled and chopped
  • 5 cloves garlic, peeled and chopped
  • 2 jalapenos, seeded and diced
  • 4 cans cannellini beans
  • ¼ C chicken base
  • 1 t dried oregano
  • ½ t ground cayenne pepper
  • 1 ½ C sour cream
  • 1 C half n half


  1. Heat a stock pot over medium heat. Add the olive oil and saute the chicken until barely pink.
  2. Add the onions, garlic, and jalapenos. Saute until onions are clear.
  3. Add the beans and chicken base, as well as enough water to cover, plus 2 inches.
  4. Stir in the oregano and cayenne.
  5. Simmer for 2 hours, until the beans pop and melt.
  6. Remove from heat; stir in the sour cream and half n half. Return to heat for 5 minutes, until pot begins to simmer again.
  7. Serve hot.

If you’d like to make a double batch and freeze some of your White Chicken Chili, it’s really easy.  Freeze it right before you add in the sour cream and half n half.  When you heat it up later, just add it in for the perfect White Chicken Chili that you’re family and guests will love.  White Chicken Chili is wonderful for everything from a simple weeknight dinner to a fancy dinner party.
