Making Dressing for Winter Goat Cheese Salad

The dressing for Winter Goat Cheese Salad is simple and delicious, plus you can make it in less than a minute, right in the bowl.  A drizzle of extra virgin olive oil coats the veggies, keeping them from sticking to each other well.  The sweet tang of balsamic vinegar will bring out the best flavors in all the vegetables and the goat cheese, without overpowering them.  A few shakes of garlic salt, oregano, and freshly ground black pepper will round everything out and give you a beautifully balanced Winter Goat Cheese Salad.

Ingredients

  • 1 pt grape tomatoes, halved
  • 4 baby cucumbers, sliced thin
  • 1 avocado, peeled and cubed
  • 4 oz goat cheese, crumbled
  • ¼ C extra virgin olive oil
  • ¼ C balsamic vinegar
  • ½ t garlic salt
  • ½ t dried oregano
  • ¼ t ground black pepper

Instructions

  1. Place the tomatoes, cucumbers, avocado, and cheese in a bowl.
  2. Drizzle in the olive oil and toss to coat.
  3. Add the remaining ingredients and stir.
  4. Serve immediately.
  5. Serves 4.

Changing Up Your Winter Goat Cheese Salad
